This savoury chestnut recipe is bursting with flavour and brimming with nutrient-dense ingredients, this dish delivers a perfect balance of simple and complex carbohydrates for sustained energy during your days at sea. Not only does it offer all the health benefits of chestnuts, but it's also incredibly easy to prepare. Â This one-pan meal is warming, comforting and filling and can be served on the table in less than 30 mins. Both simple and practical it is a crowd-pleaser on land and at sea.
Picture this: a steaming bowl of creamy risotto, infused with the earthy flavours of chestnuts and mushrooms, served up in under 30 minutes. Sounds delicious? It is!

Ingredients:
1 cup arborio rice or round rice
1 cup cooked and peeled chestnuts, chopped
1 onion, finely chopped
2 cloves garlic, minced
1 cup mushrooms, sliced
4 cups vegetable broth
1/2 cup white wine (optional)
2 tablespoons olive oil
1/4 cup nutritional yeast
2 tablespoons vegan butter
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Heat the olive oil in a large pan over medium heat. Sauté the onion and garlic until translucent.
Add the mushrooms and cook until soft.
Stir in the arborio or round rice and cook for 2-3 minutes until lightly toasted.
Pour in the white wine (if using) and stir until absorbed.
Gradually add the vegetable broth, one cup at a time, stirring continuously until the liquid is absorbed before adding more.
Once the rice is cooked and creamy, stir in the chopped chestnuts, nutritional yeast, and vegan butter.
Season with salt and pepper to taste.
Garnish with fresh parsley before serving.
