Miso Creamy Chickpeas

This delicious and comforting Miso Creamy Chickpea recipe comes together in no time at all with store cupboard ingredients and one pan. It makes for the perfect boat meal and is nutrient-rich and full of all the good stuff your body needs to enjoy a water-based lifestyle.

This recipe was also much loved by the crew of a High Performance Sailing Superyacht that I recently worked with and was a great success as a passage meal for them. We also love it onboard Kahu and is often on the menu.

We normally serve it with Rice, but more recently I served it with a homemade focaccia that soaked up all the creamy yummy sauce.


Ingredients


  • 1 small red onion finely chopped

  • 5 garlic cloves minced

  • 1 tbsp Olive Oil

  • 2 tbsp miso paste

  • 1 can diced tomatoes

  • 1 can chickpeas drained

  • 1 can coconut milk

  • 1 tbsp soy sauce

  • ¼ tsp chilli flakes (optional)

  • 2 cups baby spinach chopped

  • Black Pepper to taste (You won´t need salt as Miso is already


Instructions


  1. Heat the oil in a pan and add the onion and garlic. Cook for 5 mins being careful that the garlic doesn´t burn, as this will add a bitter taste to your meal!

  2. Add the miso paste and stir well then add the tomatoes.

  3. Keep stirring the miso paste until it melts into the sauce depending on the variety this can take a few minutes.

  4. Add the chickpeas and mix.

  5. Pour in the coconut milk, the soy sauce, and chilli flakes if using. Give a good stir!

  6. Add the spinach and let it wilt down stirring occasionally.

  7. Tadaaa! Voila! All done.


Now serve with rice, flatbread, focaccia or whatever else takes your fancy.
